Outdoor Kitchens: Plan Now, Grill by July

Every June, without fail, the calls come in: we'd love an outdoor kitchen for summer. And every June we have to deliver the gentle news that summer is already spoken for. An outdoor kitchen that's grilling by the Fourth of July is a project that got serious in March — which is to say, right about now.

Work the timeline backwards and it's obvious. Construction on a real outdoor kitchen — gas, water, and power run to the patio, counters set, shade overhead — takes several weeks once it starts. Before that come permits for the utility work. Before that, selections and ordering, and this year appliances and fixtures are running longer lead times than usual, a story we told in more detail in Appliance Backorders: Ordering Early in a Tight Market. Before all of it, design. Stack those up and a July finish has a March start date.

Design for the evening, not the afternoon

Here's the thing about cooking outdoors in San Diego: the moment that matters is 6:30 PM, not noon. In May and June the marine layer rolls in as the sun drops, and even in August a coastal evening turns cool fast. The outdoor kitchens that get used year-round are designed for that hour — a solid roof or generous cover, a heat source, good task lighting over the grill, and seating out of the breeze. An uncovered island with a grill looks great in photos and sits idle from November to April. Covered, warmed, and lit, the same footprint becomes the most-used room of the house.

The utilities are the project

The grill is the headline, but the trenching is the budget. Running gas, water, and electrical from the house to the patio is where the real construction lives, and it's why the "plan now" advice isn't just about lead times. Decisions to make early, while changes are still free:

• Gas or not? A plumbed line ends the propane-tank shuffle forever, but it fixes the grill's location for good.
• A sink changes everything. Water out there means prep, cleanup, and drinks without a dozen trips inside — but it also means drainage.
• Power for more than lights. A refrigerator, a fan, the inevitable string lights: rough in more circuits than you think you need.
• Distance from the indoor kitchen. The closer the two work zones sit, the more the outdoor one actually gets used.

Match the ambition to the household

Not every family needs the full apparatus. If you host twice a summer, a quality built-in grill with landing counters on both sides and a shaded table may be the whole answer. If your household genuinely lives outside — and in this climate, plenty do — a complete second kitchen earns its keep week after week.
