Grilling Stations vs. Full Outdoor Kitchens

Walk any backyard in Del Cerro or Encinitas this month and you'll find the same debate simmering next to the grill: do we build a proper grilling station, or go all the way to a full outdoor kitchen? With Memorial Day around the corner and everyone hosting again, it's the question we're asked most on outdoor living consultations right now.

The honest answer is that these are two different projects that happen to share a grill. Knowing which one you actually need saves real money — and prevents the sadder outcome of a beautiful outdoor kitchen that gets used like a plain grilling station.

What a grilling station is

A grilling station is a built-in grill set into a counter run, with landing space on both sides, storage below, and usually a small fridge for drinks and marinades. Add a gas line so you never swap a propane tank again, task lighting so you can cook after sunset, and you've covered what most families do outdoors: grill the protein, carry everything else out from inside.

It's compact, it's relatively quick to build, and it doesn't ask much of your yard. For a household that grills two nights a week and hosts a handful of parties a year, it's often the right-sized answer.

What a full outdoor kitchen adds

A full outdoor kitchen means you can produce an entire meal without going inside: a sink with hot and cold water, real refrigeration, serious counter space, and often a side burner, a pizza oven, or a bar with seating. That completeness is wonderful — and it's why the project is a different animal:

The question that decides it

Skip the appliance brochures and ask this instead: when you cook outside, where does everyone stand? If the crowd hangs out in your indoor kitchen while you grill alone, a station is plenty — the party's center of gravity isn't moving. But if your fantasy is the whole evening happening outdoors — prep, cooking, dinner, and the lingering afterwards — then the full kitchen is what actually delivers it, especially paired with the dining room, shade, and warmth we described in building an outdoor dining room. The equipment isn't the point; keeping the cook in the party is.

A middle path exists, too: build the station now on a footing and utility rough-in sized for the full kitchen later. Running the gas, water, and electrical once — while the trench is open — costs little extra and keeps the upgrade honest instead of ripping out finished work in three years.

A word on timing

One practical note for 2021: outdoor appliances and specialty masonry are running longer lead times than usual, so the gap between "decided" and "delivered" is wider than it used to be. We said it in March — plan now, grill by July — and at this point the honest version is plan now, grill by late summer. Either way, decisions made this month are what protect this season.
